Let’s Talk About Cake Proportions
This cake recipe was designed for the baker to choose their own cake proportions when making this decadent dessert. You can choose to use (2) full-sized 9′ round cake pans. (And in this case, all the cake batter will be used.) Or you may choose to use (1) full-sized 9′ round cake pan, then cut that single cake into 3 smaller layers. (In this case, you will have excess batter remaining.) You may also choose personal-sized cake pan shapes and sizes as well, and depending on the quantity, you may or may not have cake batter remaining. It will all depend on your baking preferences.
Chocolate for Baking
This recipe requires you to use 70-85% baking cocoa chocolate. The chocolate becomes more bitter the higher the percentage of chocolate. It is not recommended to use a chocolate with a percentage higher than 85% as the result will leave your cake tasting too bitter.
Why Should The Mixing Bowl Be Chilled?
When incorporating the ingredients for the chocolate mousse, it helps if the bowl is chilled before starting. The ingredients are very delicate at this stage and chilling the bowl helps to prevent the breakdown of the mousse from melting or separating during the manipulation process.

Chocolate CakePreheat oven to 350. Grease and flour cake pan(s). |

In a medium mixing bowl, combine all the dry ingredients-cake flour, sugar, cocoa powder, baking powder, and baking soda. Mix well. |

In a larger bowl, combine all the wet ingredients-vegetable oil, coffee, sour cream, eggs, buttermilk, and vanilla. Mix well. With a blender, slowly add dry ingredients into wet ingredients until they are well combined. |

Pour the cake batter into the floured cake pan(s). And place into the oven for 30-35 minutes. Let cool. |

Chocolate MoussePlace a saucepan with 1/3 inch of water on the stovetop on low heat. Place a glass bowl over the top (to act as a double boiler), and place broken pieces of baking chocolate inside with whipping cream. Melt the chocolate. Stir occasionally so that chocolate will not burn. Remove from heat and let cool. |

In a medium mixing bowl, whip egg whites to a soft peak with a blender. Add sugar. (The amount of sugar you add will depend on your choice of baking chocolate. A lower percentage will require less sugar, while a higher percentage will need a bit more.) Set aside. |

In another mixing bowl, whip heavy cream to a soft peak, then set aside. |

Once the melted chocolate has cooled. Place into a (chilled) mixing bowl. Add 1/3 of the whipped cream mixture, and stir until well blended. Add another 1/3 of the whipped cream and fold it into the mixture until no streaks are present. Then repeat with the remaining whipped cream from the batch. |

Now, incorporate the egg white mixture, folding it into the bowl until thoroughly combined. Add milk chocolate pieces, stir, and set aside. |

Chocolate Mousse Cake AssemblyOnce the cake has cooled, (and cut into smaller layers if desired), start with a layer of cake, then use a spatula to spread a layer of chocolate mousse over the top. Add another layer of cake, then a layer of mousse. (Repeat this process, until you reach your desired layers, Tip: Be sure to evenly distribute the chocolate mousse to the number of layers you are creating, so you will have equal amounts throughout.) |
