This Roasted Cranberry Pecan Brussel Sprout Salad is so delicious, you’ll wonder why you haven’t tried it before. Made with sweet-tart cranberries, crunchy pecans, and roasted Brussel sprouts.
I’ve seen this recipe a few times online, usually intended as a vegetable side dish. However, it works just as well as a standalone salad.

Preheat oven to 350 degrees. |

Place halved Brussel sprouts in a medium bowl and drizzle with olive oil. (Approximately 1 tablespoon) Then place Brussel sprouts on a baking sheet, flat side down. Season with salt and pepper to taste. And place in the oven. Note: If choosing to roast pecans, place them in the oven for 5-10 minutes. |

When ready, remove from oven and place into a serving dish. Add cranberries and pecans. *Optional-Add bacon bits and feta cheese. Toss to mix. |
