1 cup; softened Butter pound cake
1 1/2 cup Sugar pound cake
1/2 cup Sour Cream pound cake
1/4 teaspoon Baking Soda pound cake
3 large Eggs pound cake
1/2 teaspoon Vanilla Extract pound cake
2 cups Mixed Berries
1/2 cup Sugar
1/2 cup Cold Water
5 tablespoons Cornstarch
1/4 cup Maple Syrup
1/4 cup Lemon Juice

    Sour Cream Pound Cake Topped with Mixed Berries

    This Sour Cream Pound Cake recipe melts in your mouth! Topped with a mixed berries glaze, this cake is a guaranteed winner!

    The Pound Cake

    Preheat oven to 350 degrees. Grease or spray a loaf pan with cooking spray, then lightly flour. Set aside.

    In a small bowl mix together cake flour and baking soda. Set aside.

    In a larger mixing bowl, cream the butter and sugar together with a mixer. Then add sour cream and mix well.

    Add 1/3 of the flour mixture to butter and sugar mixer and blend well with mixer. Add one egg and blend until the egg is incorporated into the mixture. Add another 1/3 of flour to the bowl and mix. Add another egg and blend until incorporated. Repeat the process again with the remaining bit of flour and the third egg.

    Add vanilla extract, and blend into mixture.

    Pour the mixture into the loaf pan. Bake for I hour. (Check the cake at 40 minutes and 50 minutes, to ensure your cake is not done. Cooking times can vary depending on altitude, oven types, and/or cake pan variations.) The cake is ready to remove from the oven when a toothpick placed in the center comes out clean.

    Mixed Berry Glaze

    In a large saucepan, pour in cold water, over medium heat. Slowly add in cornstarch and sugar stirring continuously, as the mixture heats up.

    Add maple syrup and lemon juice to the mixture, until well blended. Add the frozen mixed berries. Mix occasionally as the berries defrost and the mixture regains heat. Once the mixture begins to boil, reduce heat to simmer and cook for an additional 5 minutes. Remove from heat and let cool.

    Once the pound cake is ready and removed from the oven, let sit for 1-2 hours before removing it from the loaf pan. After removing the pound cake from the loaf pan. Cut cake into slices and drizzle mixed berry glaze over the top. (And whipped cream, if desired.)
