2 tablespoons Taco Seasoning Packet
2 cups; low sodium Chicken Broth
2 tablespoons Tomato Paste
The Cheese
3 cups; shredded Cheddar-Jack
*1/2 lb; melted (optional) Velveeta
1/4 cup Milk
The Toppings
4-5; diced Roma Tomatoes
1/4 cup; sliced Olives
1/2 cup; chopped Bell Pepper (Green)
1 (15oz) can; rinsed and drained Black Beans
3-4; finely chopped Green Onions
1-2: ripe; sliced Avocado
to taste Sour Cream
3 slices; cooked, broken into small-sized pieces Real Bacon Bits
1 bag; large Tortilla Chips

    The Worx Chicken Nachos recipe is jam-packed with everything you need to have the ultimate party night! Chicken nachos loaded with Cheddar Jack cheese, Roma tomatoes, bell pepper, avocado, black beans, olives, green onions, sour cream, and bacon bits.

    The Filling

    Shred 1 lb pound of rotisserie chicken. In a skillet heat a tablespoon of oil, and add the shredded chicken. Sprinkle taco seasoning on chicken and distribute evenly. Pour in chicken broth and bring to a boil. Add in tomato paste and incorporate it into the mixture with a spoon. Turn down the heat and let simmer for 5 minutes.

    The Cheese

    Shred 3 cups of cheddar jack cheese. (Or purchase already shredded.)

    In a medium saucepan add milk and Velveeta cheese. Stir constantly until the cheese has completely melted.

    Preheat the oven to 350 degrees.

    On a large baking tray (or 2 standard-sized trays), add a layer of tortilla chips and spread evenly on the tray. Sprinkle with the shredded cheese (and **optional-layer of melted cheese). Then add a layer of shredded chicken. Repeat the layering process of chips, cheese, and chicken, twice more or until ingredients are used.

    Place the tray(s) into the oven for 5-10 minutes or just until the cheese has melted.

    Add a layer of tomatoes, olives, bell peppers, black beans, green onions, avocado, sour cream, and bacon bits. Serve. Enjoy!
