4-6 Chicken Thighs
1/2-1 teaspoon Salt
1/2-1 teaspoon Black Pepper
1 teaspoon Seasoning Salt
4-5 (medium), into cubes Potatoes
2-3 (large), into wedges Sliced Carrots
1 (large), sliced Bell Pepper (Green)
2 tablespoons Olive Oil
1 tablespoon Butter
1/2 (large), chopped Onion
2-4 cloves Garlic
handful, finely chopped Fresh Parsley
1/3 cup Sweet Chili Sauce
1/3 cup Honey
3 tablespoons Soy Sauce
1 tablespoon Dijon Mustard
2 teaspoons Lemon Juice

Sweet Chile and Honey Baked Chicken

Spice up your chicken dinner night with a bit of sweet chile and honey baked chicken. Advice: Make sure you make enough for seconds. This chicken thigh recipe is made with sweet chile sauce, honey, carrots, and potatoes. Sure to please any palate!

Season chicken with salt, black pepper, and seasoned salt, in a large bowl or strainer, and set aside.

Coarsely chop potatoes and carrots into cubed pieces or wedges. Finely chop garlic cloves and parsley. Chop green bell peppers into long slices, and set aside.

In a large pan add olive oil and butter and heat on medium heat until the butter melts. Add chicken thighs and sear until browned on both sides. Remove chicken from skillet and set aside.

Add chopped onions to skillet and sauté. Add potatoes and cook until softened. Add carrots and sauté for an additional 2-3 minutes. Add garlic and parsley and incorporate them into the mixture. Lower heat to a simmer and continue to cook for 5-7 minutes.

In a small saucepan, add the sweet chili sauce, honey, soy sauce, dijon mustard and lemon juice. Mix well. Heat until it begins to bubble.

If using a cast iron skillet, add chicken thighs back into the pan with the potatoes and carrots. (Otherwise, you will need to transfer the potatoes and carrot mixture into an oven-safe dish, then place the chicken on top of the potatoes and carrots.) Pour the sweet chili and honey sauce over the top of the chicken thigh pieces. Add bell pepper slices and place in the oven for 30-40 minutes.
