These Cheesy Scallop Potatoes are a perfect side dish for any dinner meal or stand-alone snack. Easy to make and satisfying!

Melt butter in a pan on medium heat. Add potatoes slices and cook for 5-10 minutes, until potatoes begin to brown. |

Mix chicken broth and milk (or half and half) into small bowl. Pour mixture into the pan, bring to a boil. |

Add salt and pepper, to taste. Reduce heat to low and cover for 13-15 minutes, or until potatoes are tender. |

Uncover and add shredded cheddar cheese. Cover and let cheese for melt 2-3 minutes. Top with green onions (optional). Let cool. |
